Grilled Fish With Salt

Grilled Fish is always one of my favorite food. Especially when we grill it with salt marinated on the fish skin make it more crispy . In Cambodia this kind of grilled fish is really popular and mostly it sell as a street food and mostly being sold in the evening. 

Grilled Fish with Salt

This grilled fish is really easy to cook by your own, Cambodian people like to serve this grilled fish in a small party with some drink.

For type of fish mostly we use Red Tilapia or Snake-Head Fish. For me i prefer the Red Tilapia it have a really nice juicy meat.

The basic ingredients that we used to grill with the wish is lemongrass and salt

Lemongrass
The fish is marinated with salt throughout the entire fish and grilled them on the fire. The external skin of the fish form a layer of salt, which retains moisture inside the fish meat and flavor to the fish too. We serve this grilled fish with sauce and some vegetables. Before you prepare the fish you should start to prepare and light up the charcoal first.



Gut the fish but do not need to scal the fish and clean it well. Smash the lemongrass to help it release the flavour more effeciency. Fill the smashed lemongrass inside the fish belly, then stain the fish with a thin layer of salt (you can wet the fish with water so the salt easily stain to the fish). Then you can start grilled your fish on your already prepare fire. The fish cook quickly or slowly depend on the size of the fish.

During your fish on the grill let's take this time to do the sauce. The sauce should taste salty sweet sour and spciy, this sauce made from Fish Sauce, garlic, chili sugar and lime juice mix together. Cambodian people like to call this sauce as Toek Trey Koh Kong (Toek Trey = Fish Sauce; Koh Kong is one province in Cambodia next to the sea, they produce a really good taste of Fish Sauce)

Ingredients:
  • Two fish
  • Salt
  • Seasoning(knor)
  • 4 Lemongrass stump and kaffir lime leaves
  • Limes
  • Fish Sauce, sugar, Bird's eye chili, and garlic
Method:
  1. We can choose Red Tilapia fish, a popular fish to grilled fish with salt. You can even grill without gut the fish.
  2. Take lemongrass and kaffir lime leaves stuff through the mouth of the fish.
  3. Take a large bowl to seasoning salt with seasoning (knor) and apply a bit of water to be able to apply well on the fish skin.
  4. Grill the fish, and then  you can take this time to make the sauce.
  5. Waiting for about 15 minutes before turning back to the other side if you turn too fast can cause the fish skin broken.
  6. Roast until skin and salt fragile, it takes about 45 minutes to 1 hour, depending on the size of the fish.
How to make the sauce:
  1. Pound garlic and bird's eye chili with little bit of salt
  2. Mix the pounded garlic and bird's eye chili with lime juice and fish sauce, a little water, sugar and stir together.
  3. Taste salty, sweet, sour and spicy for your own favorite.
